4Season Immunity Boosting Super Delish Stew
Updated: Apr 30
The thing for me about cooking is it's a meditative art form for me so am always in Flow which makes it harder to give recipes because I eye. never measure. But this stew turned out so good and it has all the best immune boosting ingredients that blend together so synergistically, I have to share. There is organic, free range chicken in mine but it is easily omitted and just as filling without.
(This recipe yields at least a dozen servings. I recommend freezing leftovers, as it's super healthy and satisfying to have when you are busy.)
Set a large pot on the stove.
Chop and sautee a large, yellow onion in avocado or olive oil.
Add 4 quarts vegetable or chicken broth.
Add generous amount of black pepper and turmeric.
Add 2 cups wild rice.
Slice and add 1/2 lb. shiitake mushrooms, one yellow pepper, one orange pepper, one head broccoli, 5 large carrots, and 2 parsnips.
Dice and add one large finger of ginger (yum!)
Chop and add one large organic, free range chicken breast.
Add one whole packet of Arame seaweed.
Add one stick of butter. (Yes I did!)
Simmer for 2-3 hours.
